i’m not moving

Day 13 of the 30 day challenge is somewhere I’d like to move or visit. I have always wanted to visit Bali. And yes, I have fantasized about going to Bali long before Eat, Pray and Love made it popular. Why Bali, you ask? I’m honestly not sure. It always symbolized some place rustic and daring; romantic and mysterious; majestic and scary. I definitely want to go to Bali one day…and Keith does too. He hasn’t admitted it yet, but he does. 😉

A place I would like to move? Honestly, I am 100% happy in Austin. I grew up here and it feels familiar. I love it. Every single thing about it. The weather is nice (for Texas), the people are fun, the town is funky and there is a spirit here that can be felt. Now I think a reason I love Austin so much is also because my parents are here. Both my mom and my dad and I wouldn’t have it any other way. Unless me or Keith got an amazing job opportunity that we couldn’t turn down I would not leave Austin. I am sure that means I am closing myself off from some great experiences and cultural opportunities but I am okay with that. I am a sap and I prefer to live here where my past lies, where my present lives and where my future will be.

an oldie but a goodie

This recipe is all my all-time favorite go-to chicken recipe. It’s easy, impressive and best of all makes your house smell amazing! Right Julie? I give you…Rosemary Chicken.

Rosemary Chicken from Real Simple Magazine

1 pound new potatoes
2 carrots
2 small zucchini
2 tablespoons olive oil
2 tablespoons whole grain mustard
1 bunch of fresh rosemary
4 (6-ounce) boneless skinless chicken breasts
Salt and Pepper

Heat oven to 400 degrees F. Quarter the potatoes. Peel the carrots. Cut the carrots and zucchini into 2-inch sticks. Mix them in a bowl with olive oil, mustard, rosemary, ½ teaspoon salt and ¼ teaspoon pepper. Season the chicken with ½ teaspoon salt and ¼ teaspoon pepper.

Place everything in a 9X13 baking dish. Roast for 25 minutes. Toss the vegetables, turn the chicken and continue roasting until chicken is cooked through, 20-25 minutes more.

a day in the life

Day 12 of the 30 day challenge is to bullet my entire day. Really?! Ugh! This has been my least favorite so far. Okay…here you go. A life in the day of Kelly:

  • 4:30am: Keith’s alarm goes off (he snoozes twice)
  • 5:15am: Keith leaves for work and I roll back over (yeah baby!!)
  • 6:00am: my alarm goes off. I get up and choose to be happy and start my day.
  • 6:30am – 7:30am: 1 hour spin class
  • 7:45am: come home and eat breakfast and (more importantly) drink coffee; check blogs; check email; play on twitter. Breakfast was Sarena’s Sweet Potato Oats (her picture not mine…trust me her’s is better…thanks Sarena!)

  • 8:15am: SHOWER! I tweeted the following:

  • 9:00 – 12:30pm: work. boring.
  • 12:30: lunch. Nothing fancy. Leftover grilled cod, the other 1/2 of my sweet potato from the morning and zucchini (no picture…use your imagination)
  • 1:00pm: Met my mom at the post office to renew my passport only to discover they do passports by appointment only. Fail.
  • 2:00 – 4:00pm: more work. frustration building to an all day high.
  • 4:00-5:30pm: Take a break, eat a snack and READ! I am reading the best series ever! It is by Lee Child and it is his Jack Reacher novels. SO SO SO good. I actually didn’t mean to read for an hour and half but damn those books are addicting!
  • 5:45-6:45pm: Bootcamp at the park. Favorite part of my day every day!
  • 7:00pm: dinner. Homemade roasted red pepper hummus, homemade tabbouleh and diced chicken served in corn tortillas. Perfect!
  • 7:30pm – 10:00pm: more reading. I am telling you I am addicted. Send help…or more Reacher books! 😉
  • 10:30pm: BED. Actually more like Keith telling me if I don’t turn off the light and stop reading he is moving to me the guest room.
  • And that is my life and I wouldn’t change it.

best vacations part IV

Keith and I are having our 5 year wedding anniversary this weekend and I have been doing a vacation series. I have been recapping all our best vacations (pre-marriage). But I am going to go ahead and make this last recap our honeymoon. It seems fitting no? (Part I, Part II, Part III)

For out honeymoon we spent 10 glorious day in Maui, Hawaii! It was amazing! We stayed on Ka’anapli Beach at the Ka’anapli Beach Hotel (highly recommend) and it was perfect. The perfect little (no frills hotel) with live Hawaiian music every night and a sweet staff to help make the experience so memorable. Keith and I rented a jeep and every day we would pack a picnic lunch and head out to a different beach on the island. We snorkeled our little hearts out and ate some amazing fresh fish. It was perfect. Absolutely 100% perfect.
