i am summer for mangoes
So even though I am not much of a summer lover in terms of the weather, I AM a summer lover in terms of the food.
Grilling.
Ice Tea.
Fresh Fruit.
Sign me up.
I do love some summer food!
One of my favorite things to make in the summer is mango salsa. I typically serve it over grilled chicken or fish but feel free to grab a tortilla chip and go to town. Oooooh or make fish tacos.
Plus it super easy and pretty.
Now who doesn’t like pretty food?
Summer Mango Salsa
- 1 ripe mango, peeled, pitted and diced (about 1 1/2 cups)
- 1/2 – 1 tomato, diced
- 1/2 medium red onion, finely chopped
- 1 jalapeno pepper, minced
- 3 Tbsp. fresh cilantro leaves, chopped
- 3 Tbsp. fresh lime juice
- Salt and Pepper to taste
Combine all of the ingredients in a bowl. Season to taste with salt and pepper. Optional add-ins include avocado, cucumber, or jicama.
So tasty. I basically keep it stocked in the fridge all summer long for me and Keith to eat. That and fruit salsa. The two summer staples of the Bruneman household.
See? I am not a total summer Scrooge.

Mmm I love mangoes! But I do NOT love chopping them up. Slippery little suckers.
Summer staple is definitely fresh fruit, namely watermelon. Just can’t get enough lately!

Summer staple? Camelbak filled with ice water and buckets and buckets of watermelon.

I love mango salsa. It’s the perfect combo of sweet and savory and so good on fish!
I love summer food. It’s the best part. I’m all about summer salads that are loaded with mango and strawberries and things like that. They’re so delicious.
And the smell of bbq in the air may be the best thing ever.

We go through a ton of mangoes – our HEBs down here have them for 2/$1 all the time. I’m also a big watermelon eater, as in we go through one every 4 days or so. I can eat watermelon every day and still crave more.

Summer staples for me are ice cream, baseball games, fruit, fruit and more fruit!
I would like it without the tomato and onion so really then it’s just mango, jalapenos and some seasoning. Ha.
I love fruity salsas! Mangoes tend to be hit or miss with me. Sometimes I really love them and sometimes they are just so-so.
