stuff it
It seems this week I am all about stuffing things. HA!
Get your mind out of the gutter, people! 🙂
We had stuffed bell peppers on Monday and last night I stuffed chicken.
Feta Stuffed Chicken Breasts
1/3 cup crumbled feta (I used a sun-dried tomato flavor)
1 Tbsp. olive oil
1/2 cup chopped red onion
1 Tbsp. capers
1/4 cup basil leaves, chopped
4 (4 oz.) boneless skinless chicken breasts
Heat oil in a nonstick skillet over medium-high heat. Add onion, stirring, 3-4 minutes until soft.
Remove skillet from heat and transfer onions to a small bowl. Stir in the basil, feta and capers.
Cut a horizontal slit in chicken to form a pocket. Stuff 1/4 of the cheese mixture into each chicken breast.
Return skillet to medium-high heat and add a tad more olive oil.
Add chicken and saute for 6 minutes. Carefully flip chicken over and cook for another 6 minutes or until chicken is cooked through.
Serves 4
Served with roasted red potatoes and broccoli. Winner winner chicken [Tuesday] dinner.
So it’s Wednesday and we know I love Wednesdays (she says with a roll of her eyes) but hopefully it’s a good one.

Stuffed olives, hands down! It’s a family recipe that has been passed down for generations.
Mmmm stuffed mushrooms for the win! Though now I’m craving feta or chicken cordon bleu!
I think I have to go with stuffed bread, as in like stromboli or any other cheesy, carby Italian delightfulness.
You can never go wrong with carbs and cheese!
I just had stuffed chicken at a wedding on Saturday! It’s one of my favorite dishes…I especially like chicken cordon bleu.

I love stuffed chicken. Especially when the stuffing involves cheese. I think my favorite are stuffed tomatoes though. With pine nuts, basil, spinach and feta. So freaking good.
