This weekend was good.

Probably the best weekend we’ve had in a while. And ironically we didn’t really do anything.

We needed it.

I finished the book, One Day, and honestly this might move onto my top 10 list of favorite books of all time. It was that good (in my opinion). I also started American Wife and it is really good so far.

Keith and I did this workout; compliments of Katie. If you want to hurt in a total “I’m a badass” type of way then do it.

The Cowboys won. This made Keith happy and on football Sunday a happy husband makes for a good day! 😉 (We won’t talk about the Colts game)

I washed all my clothes. I know this doesn’t sound like it would be fun but my basket was overflowing. In fact, I hadn’t done laundry in 3 weeks. So getting that done was a huge monkey off my back. Oh and now I don’t have to go buy clean underwear because I have some neatly folded in my drawer.

I made a killer green smoothie. It had 1 cup almond milk, big handful of spinach, 1 tbsp. peanut butter and 1 cup frozen blueberries. It was lick the glass good.

I got my wedding and engagement rings cleaned! I now feel very bling bling.

And I made stuffed bell peppers which I haven’t made in easily a year so it was a nice change up to our normal dinner routine.

Stuffed Bell Peppers

4 large bell peppers (any color)

1 pound lean ground beef, cooked

1 cup chopped onion

1 cup low-fat cheddar cheese

1 cup cooked brown rice

2 teaspoons taco seasoning mix, dry

1 cup canned tomato sauce

Preheat oven to 375 degrees F. Slice the tops off the peppers and then slice in half lengthwise; remove seeds, wash and pat dry. Place pepper halves in a small baking dish sprayed lightly with nonstick spray and roast for 15 minutes.

Meanwhile, brown beef (bison or turkey…whatever you are using) in a skillet. Drain off excess fat. Stir to combine all ingredients, except for peppers; set aside.

Remove peppers from oven and reduce temperature to 350 degrees F. Evenly spoon mixture into pepper halves and return to oven for 20 more minutes.

Serves: 4

    I think you just helped me figure out what to make for dinner! That looks delicious! 🙂

    My weekend was good – went to the beach on Saturday (cold but clear!) for a walk with my husband, then that turned into a pubcrawl on the seacoast (oops). Yesterday, we went to the Trans-Siberian Orchestra concert which was amazing! I’m tired today!

      I LOVE the Trans-Siberian Orchestra. I have seen them once live and I have the CD that plays in my car nonstop from mid-November to January!

    I got some laundry done, too! Always a nice feeling. Those stuffed peppers are a staple in my house! We eat them ALL the time! I found that recipe on your old blog a long time ago and we fell in love with them!

      Would you believe Keith doesn’t really like them? He hates bell peppers and will usually just pick out the insides. Hence why I don’t make them very often.

    I’m surprised to hear you say you liked One Day! From the previews it sounded so cheesy, but for some reason you saying it is good means it wasn’t a cheap romance wannabe like I imagined. I will totally get the audiobook from the library… I need a new audiobook to help my workouts go by faster!

      HAHA! Thanks! I really liked it. I just liked how it was written and I liked the humor. It was dry humor and I thought it was good. It also wasn’t at all what I expected. It is definitely NOT a boys meets girl, fall in love, live happily ever after kind of a story!

        Oh…and I should say that I didn’t see the movie. It got HORRIBLE reviews and I probably won’t see it. The book was good and that it all I need.

    I’m reading a good one too – Caleb’s Crossing by G. Brooks. I really like her style of writing.

    We had a great weekend, partly because the weather was amazing. Glad you had a good one too!

    My weekend was a good one too! We went to a friend’s wedding and then just lazed around all day on Sunday.

    I’m so with you on weekends being fantastic even without much going on. That’s how mine felt too. So you really like American Wife so far? I always hear such great things about but then put off registering for it at my library. Guess I need to. Also must check out the book you love because I know we have similar tastes. 🙂

    i love stuffed peppers! this looks like an awesome recipe. i didn’t do much this weekend either..had a weekend to myself- lots of lounging, tv watching, some workouts. it was great! 😀

    Totally badass. Someone left a comment on that workout calling me a “Titan” and I totally ran with it. I’ve been calling myself a titan all weekend.

    I actually picked up One Day on a book splurge a couple months ago and haven’t gotten around to read it yet! You just motivated me to jump into to reading!

    cowboys SMOKED them! its about bloody time too. Glad this weekend was low key, we need those for sure. I got in a nap, yes, me! i swear these allergies are making me want to nap like a baby. haha.

    I love weekends like that. I’m also glad to know One Day is good. I started reading it and I’m having a hard time getting into it.

    One Day is one of my favorite books too. Sadly, the movie isn’t nearly as well. I LOVE American Wife too!!!
