I hope all my American readers had a fabulous 4th of July yesterday! I am a big fan of July 4th weekend. It holds a very special place in my heart. July 4th marks the beginning of my relationship with Keith. Many of you know our story. It is a tale in persistence! ha! Keith is 11 years older than I am and we have known each other for my entire life. (Our families are friends). I had the BIGGEST crush on him when I was 15 and ten years later when I was 25…I married him. 😉 But we started officially dating on July 3, 2004.

Then exactly one year later on July 3, 2005 Keith proposed to me on the beach in Mississippi under the fireworks. I had just said YES in this picture!

And the next day…July 4th…as an engaged couple!

I guess the next logical conclusion would be to assume we got married on July 3rd the next year but we didn’t. We didn’t wait that long and instead got married in April. But July is always such a special month to me. Finally getting to be with Keith and then getting engaged to him a year later. I think the actual proposal is a lot more romantic than the wedding. The proposal is when you choose to ask someone to spend their life with you…the wedding is the decision. So July 4th weekend will always be a weekend that I look forward to every year.

HAPPY FOURTH OF JULY! I hope whatever your plans are today you take time to remember what we are celebrating and how wonderful our nation really is. I also want to thank our military for everything they do to protect America and therefore allowing me the freedoms that I take for granted every day.

Hey hey! Well first I have an EASY recipe for you. Yesterday afternoon I threw 2 chicken breasts into my crockpot with about a 1 1/2 cups of salsa. I set it on low for about 2 hours. I shredded it and left in on warm for the rest of the day. Then for dinner I sautéed some onion and zucchini in fresh lime juice on the stove top and mixed it with the shredded chicken. I then took 2 corn tortillas and crisped them under the broiler, added some guacamole and topped them with the chicken mixture. Last I sprinkled some nutritional yeast on top and dinner was served! Easy as pie. Although can I just say I am not sure about that because pie isn’t easy to make when you are doing it from scratch. Whatever, Martha Stewart probably invented that saying and I’m sure pie is easy for her. Moving on….

A few of you emailed me yesterday concerned about how tired I said I have been lately. Yall are too sweet. Truth is I have recently been diagnosed with hypothyroidism (say that three times fast) or more commonly known as an under active thyroid. Your thyroid is the gland that releases hormones that regulate your metabolism. Hypothyroidism can cause many different symptoms, such as:

  • Feeling tired, weak, or depressed.
  • Dry skin and brittle nails.
  • Not being able to stand the cold.
  • Constipation.
  • Memory problems or having trouble thinking clearly.
  • Heavy or irregular menstrual periods.
  • Weight gain.

Fun, huh? The good news is that it is treatable. Doctors usually prescribe thyroid hormone pills (my doctor gave me Synthroid) and once the correct dosage is found most people start to feel better within a week or two BUT  I will likely need to keep taking the pills for the rest of my life. Right now we are playing around with the dosage to find the one that works best for me.

I was experiencing a lot of those symptoms above (don’t worry, I won’t go into those details) and my mom has a thyroid condition as well so I went in to get it checked. It was a simple blood test that measured a lot of hormones in my body (I won’t bore you with all the technical medical terminology) and we found that I did indeed have it. I am not thrilled about this…um…at all….but it is what it is right? I can bitch and moan and say life’s not fair (oh wait I have done that) or I can just shrug my shoulders and deal. I have realized that no amount of complaining to Keith is going to fix the problem so I might as well just deal with it the best I can. But I would like to quickly say that if my husband could just have an ounce of body fat it might make me feel a little better. Seriously just an ounce that’s all I’m asking for here. Sheesh.

So there you have it. I am (right now) really tired in spite of the fact that I religiously get 8 hours of sleep every night. Damn thyroid. 😉

i’m a fan of lists

I am a big fan of lists. Huge fan. They keep me organized and I get true satisfaction of crossing things off and then seeing all my tasks done at the end of the day. I guess I am a visual person. I am also very tired lately. Like pull myself out of bed after 8 hours of sleep and still feel like I could sleep for another 8 more kind of tired. So instead of getting all creative I am just gonna make a list:

  • I sleep in the same clothes almost every week night and then wash them on the weekends. Is that gross? I figure I am clean when I go to bed and if all I do is sleep how dirty can I get?
  • My least favorite thing to do in the summer is blow dry my hair. I sweat through the entire process and then just get cranky.
  • I am teaching my husband how to use Facebook and Twitter. It’s a process.
  • We got Kodi’s ashes back last week and I have been sleeping with them on my night stand. I know that is probably unhealthy but I don’t care.
  • I have a hard ankle sock tan lane from my running shoes. I look completely ridiculous with sandals on.
  • Keith has been making Kale chips every weekend and he likes it!
  • I didn’t like Bridesmaids
  • Sometimes insurance companies surprise you.
  • I haven’t called my mom back or returned her texts in 3 days. I’m sorry mom! I promise to call you today!!
  • The bootcamp class I went to last night was hard and I liked it! The harder the better!
  • I have officially read 14 of the 16 Jack Reacher novels since being introduced to them about 3 months ago.
  • I have made migas for dinner for the last three nights in a row and somehow Keith isn’t complaining. (in my defense  my chickens are producing like crazy! We are getting close to 30 eggs a week!)
  • When I opened my electric bill last night I almost fainted.
  • And…it’s Thursday…2 more day until a long weekend. I think I can. I think I can. 🙂
