i don’t do halfway

Wednesday.

Probably my least favorite day of the week.

I am not a halfway girl.

I don’t like the half way point.

I never run a race and think oh good only half way.

I think holy crap I have to do exactly what I just ran, again?

That pretty much applies to everything.

Halfway simply means I just have to repeat what I have already completed. And in Wednesday’s case it isn’t even a true halfway. It’s more like a “no” day. Because after Wednesday is over I still have to repeat the equivalent of Monday and Tuesday.

Don’t you love how my brain works?

I thought so.

Wednesdays make me grumpy.

The only redeeming quality of Wednesday is that Top Chef comes on. But let’s be honest. I tivo it and watch it on Thursday mornings while getting ready.

I guess my view-point on the halfway mark can also be looked at through the old adage: A glass half empty or a glass half full?

I am, and always have been, a glass half empty kind of a girl.

I think I get this from my Dad.

I don’t consider myself a particularly negative person but I have never in my life seen a glass sitting on a table with half the liquid in it and thought that glass is half full.

Ever.

I wish I had some witty point to make but really I just wanted to take you on my grumpy Wednesday ride.

I am so thoughtful.

I wonder if I could go back to bed and try this day again.

Huh….like that’s an option.

I guess I should just get started and see what kind of trouble I can find myself into today.

So this thing most people call “fall” might have finally arrived in Texas!

What? What?

Today’s high, my friends, HIGH is 75. That is huge for us. Considering that has been our normal low and the high has been around 92.

75 degrees…I will take that.

It is supposed to last a few days before we slowing start inching our way up to the 80’s again.

75.

Are you kidding me???

Somebody pinch me. I must be dreaming.

I must.

So you know what this means? I can finally eat hot oatmeal again.

Praise the Lord.

Can I get an Amen?

Baked Apple Oatmeal

2 cups rolled oats

1 ½ teaspoon baking powder

½ teaspoon salt

1 cup milk (I used organic vanilla almond milk)

1 egg

2 egg whites

½ cup unsweetened applesauce

¼ cup brown sugar

¼ cup raisins (optional. I was out of raisins this time around)

1 teaspoon vanilla

1 teaspoon cinnamon

1 tsp apple pie spice

1 cup diced apple

Preheat oven to 325 degrees F. In a large bowl combine oatmeal, baking powder and salt. Mix in remaining ingredients; stir and pour into a greased 8 x 8 baking dish. Bake for 45 minutes or until toothpick inserted in the center comes out clean. Cut into bars.

Serves 6

Do you prefer apple or pumpkin this time of year?

I watched my Aggies beat Baylor!! WHOOP!

I watched the Colts lose to the Bengals making us 0-6 on the season. And then I cried.

I made Chicken Enchilada Casserole. That made me feel a little better.

Chicken Enchilada Casserole

  • 1 lb. boneless skinless chicken breasts, cooked and cubed
  • 1 cup Fage
  • 1 (19 oz) can green enchilada sauce
  • 12 corn tortillas
  • 1 (to 1 1/2) cups reduced fat shredded Mexican cheese blend
  • 1 cup salsa

Preheat oven to 350 degrees. In a medium bowl, combine chicken and Fage. Pour 1/2 cup enchilada sauce into the bottom of a 9X13 casserole dish. Place 4 tortillas on top of sauce. Layer half the chicken mixture on top of tortillas. Sprinkle with 1/3 cup cheese. Layer a cup of salsa, place 4 tortillas on top of this. Layer remaining chicken mixture and 1/3 cup cheese on top of tortillas. Cover with remaining tortillas. Pour remaining enchilada sauce over tortillas.

Cover the casserole with foil and bake for 35 minutes, or until bubbly. Uncover and sprinkle remaining cheese on top of the casserole and let cook another 5 minutes, or until cheese is melted.

Serves 6-8

I love love love looking back at old pictures! I think it is so fun! I found a picture of me and Keith, circa 2004, on our first “date”. Keep in mind that our families have known one another forever and I grew up crushing on Keith. So if we look a little close in this picture for a first date it is because quite literally Keith had known me for my entire life.
