I watched my Aggies beat Baylor!! WHOOP!

I watched the Colts lose to the Bengals making us 0-6 on the season. And then I cried.

I made Chicken Enchilada Casserole. That made me feel a little better.

Chicken Enchilada Casserole

  • 1 lb. boneless skinless chicken breasts, cooked and cubed
  • 1 cup Fage
  • 1 (19 oz) can green enchilada sauce
  • 12 corn tortillas
  • 1 (to 1 1/2) cups reduced fat shredded Mexican cheese blend
  • 1 cup salsa

Preheat oven to 350 degrees. In a medium bowl, combine chicken and Fage. Pour 1/2 cup enchilada sauce into the bottom of a 9X13 casserole dish. Place 4 tortillas on top of sauce. Layer half the chicken mixture on top of tortillas. Sprinkle with 1/3 cup cheese. Layer a cup of salsa, place 4 tortillas on top of this. Layer remaining chicken mixture and 1/3 cup cheese on top of tortillas. Cover with remaining tortillas. Pour remaining enchilada sauce over tortillas.

Cover the casserole with foil and bake for 35 minutes, or until bubbly. Uncover and sprinkle remaining cheese on top of the casserole and let cook another 5 minutes, or until cheese is melted.

Serves 6-8

Now excuse me while I go get this Monday started.

    OK that looks so hearty and delicious! I cannot believe the Colts, hang in there, my Lions finally figured out how to get a few wins:)

    I got to go enjoy the outdoors this weekend, it was perfect. happy Monday!

    Mexican makes everything better, even a dismal football season. Beer also helps.

    I had a friend in town with her kids for the weekend to do Sea World. She went to Baylor. Husband and I are Aggies. It was greatness. 🙂 Sea World was fun too.

    It was my 30th birthday! ACK! I’m so sorry about the Colts. Poor Peyton. Purdue lost, too. Clemson tried to lose, but didn’t. And my Hokies won! We’re going to Blacksburg this weekend. YAY FOOTBALL!

    My friend is a Rams fan and they’re without a win as well. We listened to the game the entire drive back to Chicago. Painful.

    Fun weekend girl!! I love your dinner….it looks delicious!!

    The best part of my weekend was watching movies with friends and finding the halloween costumes that will rock our party this coming saturday!!
