So this thing most people call “fall” might have finally arrived in Texas!

What? What?

Today’s high, my friends, HIGH is 75. That is huge for us. Considering that has been our normal low and the high has been around 92.

75 degrees…I will take that.

It is supposed to last a few days before we slowing start inching our way up to the 80’s again.

Are you kidding me???

Somebody pinch me. I must be dreaming.

I must.

So you know what this means? I can finally eat hot oatmeal again.

Praise the Lord.

Can I get an Amen?

Baked Apple Oatmeal

2 cups rolled oats

1 ½ teaspoon baking powder

½ teaspoon salt

1 cup milk (I used organic vanilla almond milk)

1 egg

2 egg whites

½ cup unsweetened applesauce

¼ cup brown sugar

¼ cup raisins (optional. I was out of raisins this time around)

1 teaspoon vanilla

1 teaspoon cinnamon

1 tsp apple pie spice

1 cup diced apple

Preheat oven to 325 degrees F. In a large bowl combine oatmeal, baking powder and salt. Mix in remaining ingredients; stir and pour into a greased 8 x 8 baking dish. Bake for 45 minutes or until toothpick inserted in the center comes out clean. Cut into bars.

Serves 6

Do you prefer apple or pumpkin this time of year?

Apple for me. Definitely apple!

    I feel for you, girl. I grew up in Galveston and often prayed for someone to blow in my face just so I could remember what a breeze was. The good thing is once it hits fall there, it will stay fall until next spring!

    And I’d like to join you on the apple train.

    Nice! It got cooler here for a while but then it’s been in the 80s for the past few days. Blah. In pie form, I like pumpkin better, but in other forms, I do like apple.

    I actually don’t really have a preference…I like both, however, hot apple dumplings might make me lean a little more toward apple!

    Amen to that sister! It’s going to be 67 for the high in Dallas today. I dug out some jeans and a heavy hoodie to wear to class this morning..it was 54! Just wait..we’ll be back to the 90s within the next week or so. I really hope not though. I love this weather.

    I am in heaven today! Hope the weather holds like this for a bit. Did you see that dust storm that hit Lubbock? My friend sent some crazy pictures – looks almost apocalyptic.

    I can’t believe its still so warm there. I’m glad its starting to cool down though. 🙂

    I definitely prefer apples over pumpkin. Pumpkin is only good sometimes. Apples are always delicious.
