what can change in 90 years
Can I get a TGIF? This week flew by, seriously, how is it already Friday? But even with the holiday on Monday, I am more than ready for the weekend. This weekend should be pretty fun too because Keith and I are celebrating my Grandpa’s 90th birthday on Saturday even though TODAY is truly his birthday! So Happy Birthday Grandpa!
The party is going to be at Jann’s Art Gallery so it should be a really good time! 90 years old and he still is just as active as can be. Anyone need a racquetball partner? I am totally serious. I can’t help but to think about all the things he has seen change in his lifetime. It is amazing how quickly a city can change, technology can change, the world can change. It is pretty remarkable if you ask me.
Keith parent’s are also in town for the party and they are staying with us. In an effort to appear to be the hostess with the mostest I made cookies. I mean nothing says welcome to my home better than cookies right?
Peanut Butter Chocolate Chip Cookies
- 1 cup + 2 tablespoons all-purpose flour
- ½ teaspoon baking soda
- ½ teaspoon salt
- 2 ½ tablespoons unsalted butter, softened
- ¼ cup natural chunky peanut butter
- ¼ cup + 2 tablespoons packed dark brown sugar
- 1 large egg
- ½ teaspoon vanilla extract
- ½ cup chocolate chips (I used about a 1/4 cup of mini chips)
Preheat oven to 350 degrees F; spray two baking sheets with non-stick spray.
In a medium bowl, combine the flour, baking soda and salt. In another medium bowl, with an electric mixer on high-speed, cream the butter and peanut butter. Gradually beat in the brown sugar; add the egg and vanilla, beating until fluffy. With the mixer on low-speed, gradually beat in the flour mixture until blended. Stir in the chocolate chips.
Drop the dough by generous tablespoons onto the baking sheets, forming 12 cookies on each sheet; with back of a fork, lightly press each cookie to flatten in a checkerboard pattern. Bake until lightly browned on the bottom, 12-15 minutes. Cool completely on a rack.
Yields: 24 cookies

Love the cookies. Especially with peanut butter. But only one egg? With all those eggs you have I’d think you’d sneak more in. 😉

For real! He is amazing. He is the most active person I know! He makes me look lazy! Racquet ball, tennis, volunteering…the man is never home!

OMG! Your grandpa looks awesome! My grandma turned 90 last november and I’m amazed at how well she is doing! She’s not as active as your grandpa though! I aspire to be that fit in my 90s! WOW!

Mine just turned 88 a couple of weeks ago. Amazing! He is super active too so I can only hope that I am still going strong at that age like our grandfathers! 🙂
