And just like that the weekend is over. Truth? Not so sad about that. This weekend kicked my ass.

I was in a funk. You know those moods you know you shouldn’t be in but you can’t seem to snap out of it. That was me.

That picture was actually me headed to Costco ON.A.SATURDAY. Let me tell you, Costco on a Saturday is not pleasant. They put out all these samples and then people act like they have never once in their entire life ever seen a cracker with some cheese on it. I barely got out alive. Barely. Usually Keith does the Costco run for us and now I have new respect for what he goes through. That place is crazy with a capital C.

Other things I accomplished this weekend:

  • Weekly grocery shopping at Natural Grocer
  • Oil Change
  • Car Wash
  • Weekly meal prep
  • Laundry
  • Library run (to return and check out)
  • Graded stacks and stacks of papers
  • Shaved my legs (don’t laugh that is something that has been put on my to-do list for an embarrassingly long time now)
  • Dog park
  • Body Pump (my triceps hurt like you wouldn’t believe….)
  • Dinner and movie with friends
  • Dinner with my Dad and Stepmom <—-easily the best part!

It was quite the whirlwind. And all of that while I was in a mood that was hard to reckon with. But tonight, Keith and I plan to hang out.

Snuggle.

Maybe drink some wine.

And just be.

Because sometimes all you can do…..is just be.

Well let me be the first to say Happy Valentine’s Day a week late.

Oops.

Seriously, life as teacher gets so busy that days run into weeks and then weeks into months and then I am left looking at a calendar wondering how on earth it could possibly be February. And mid-to-late February to boot!

But, I hope you all a terrific day filled with whatever makes you the happiest.

Things are good. I got sick back at the end of January and I am still fighting it. I work in germ factory. Just when I am starting to feel better some cutie pie wraps his/her arms around me and promptly sneezes spraying me with all kinds of germs. Soap, Purell and Clorox have become staple vocabulary words in my second grader’s repertoire.

The good news is that this week I feel like I am on an upswing. So keep your fingers crossed that no stray sneezes make their way onto me. 😉

I found out a good friend of mine is pregnant. She is a sweet friend who also suffered a miscarriage trying to her have her first baby. I should be thrilled for her and I am! But I would also be lying if I told you that I didn’t shed some private tears at how badly I want what she has. I really have nothing to report on that front. Keith and I have seen the fertility specialist and are in the middle of the long and tedious process of testing. We are both having every conceivable test run and it is going to take a little bit longer to get all the information collected, sorted and dealt with. Sometimes I just feel like this is never going to happen. And then other times I feel like I should be cherishing this incredible time I have with Keith because it won’t always be just the two of us.

I sometimes think my heart and my brain aren’t on speaking terms, as they constantly contradict on another. What can I say, it’s hard. And it stinks. That pretty much sums it up.

In other news, on the recommendation from a coworker I downloaded and read Delirium. DANG! I am hooked. I love a good book and, even more, trilogies! I’ve already downloaded book 2 and pre-ordered book 3. Did I mention that I liked it? I also finished my book on tape, Water For Elephants. So good yet so sad. I have heard differing opinions about the movie so I doubt I will see it. I hate it when a movie ruins a good book for me.

And other than that, you are caught up. Could I possibly be any more pathetic?! ha! Teaching, Reading, Fertility…and that would be my life. 😉

Hey! Hey!

Random middle of the week blog post? Why not. Not too much is going on aside from the fact that I caught a cold from hell. No seriously, straight from hell. Thankfully it wasn’t the flu but dang I felt awful.

Fever. Stuffy nose. Sore throat. Cough. Headache. Jaw ache. The works.

You know how when you just feel so bad that you can’t do anything. You can’t eat, can’t sleep, can’t breathe? I cried. A lot.  A whole lot. I turn into a big ole baby when I am sick. I wallow and I wallow hard.

I am finally on the upswing. Thank goodness. Not 100% but waaaaaay better than I was this past weekend. Whew.

But before I got sick I made the best {of 2013} recipe. Ready?

Coconut

Flour

Tortillas.

They were amazing. Grain-Free and Gluten-Free and so good! I meant to post these here but got sick and well…..

Coconut Flour Tortillas (with helpful notes)

6 egg whites

1/4 cup coconut flour

1/4 cup coconut milk

1/2 tsp each cumin and garlic powder

1/4 tsp of each salt and crushed red pepper

Blend everything in a blender for 20 seconds. Transfer into a small bowl and let sit for 10 minutes to let the batter get thick. If it gets too thick add a splash of water.

Heat a nonstick skillet and pour 1/4 cup batter into skillet. Use the backside of a flat rubber spatula to spread the batter thin. Cook until the top of the batter is not sticky to the touch. Flip and cook another minute until done.

Lay it on a paper towel and make the next one. Layer a paper towel in-between each one as they cool.

Makes 6

Per Tortilla: 46 Calories, 1g Fat, 3.5g Carbs, 4g Protein

These are so good! Keith LOVES them too. They stay together and roll up and actually get even better (and firmer) the next day. But store them in the refrigerator.

I made a huge batch the other day and it has been a fiesta in our house ever since! ha! I am working on a coconut flour pizza crust. Stay tuned.

Hiiiiiiii. I am enjoying a lazy Monday morning. Say what?! Yes. It is a school holiday today in honor of MLK Day. So I am soaking it up. I hope your Monday is going fabulously as well! I celebrated last night by watching 6 episodes of Felicity. Crazy things over here people. Crazy.

I realized I haven’t done a favorite things post in a long time….so why not today? Here is a list of my current favorite things:

1. The Keurig Platinum. Oh my stars. Keith and I got one for a holiday gift. I’m in love. Coffee on demand. Yes, please!

2.  These racerback workout tank tops from Old Navy. They stay in place and fit really well and it is only $8.50. Score.

 

3. I recently discovered Crofters jam. SO amazing. It is organic and doesn’t have a ton of sugar. If you like your jam/jelly sweet then you won’t like this. But I am digging it. My favorite flavor so far is the Superfruit.

4.  Bic Flair Pens. A fellow teacher introduced me to these. For real best.pen.ever.

5. Hunter boots. My mom got these for me and they are amazing! Like amaaaaaazing.
