a single serve cookie

Sometimes you just need a cookie.

Like really bad. Like really really bad.

That was me on Friday night. I needed a cookie.

What I didn’t need? A dozen of ass-enlarging cookies. Because you know how you dutifully place one cookie on a plate telling yourself this will do the trick. I just need one cookie. One inevitabley leads to two because really two is a real serving size for cookies. I mean everyone knows that. And then somehow by the next morning you realize 5 are missing. A quick calculation reveals that you, are in fact, the sole inhaler of those 5 missing cookies.

I know myself well.

So on Friday night when I grandly announced that I needed a cookie I knew I needed to control this situation.

I was going to make a single cookie.

In the oven.

One. Cookie. And not one the size of a quarter. A real cookie.

Keith found this highly amusing. Well excuse me mister I can eat a plateful of cookies everyday for the rest of my life and lose weight. Some of us aren’t that blessed.

I digress. Back to that One Single Cookie:

2 Tbsp. whole wheat flour

1 Tbsp. brown sugar

1/4 tsp. baking soda

2 tsp. butter, softened

1/2 Tbsp. almond milk

Preheat oven to 350 degrees. Mix everything together and place cookie on a cookie sheet sprayed with Pam. Flatten the cookie dough slightly. Bake for 10 minutes.

You can add in whatever you want too…chocolate chips, M&M’s, raisins, coconut, nuts, whatever you feel like. But the plain version is yummy too!

Oh cookie craving…I OWNED you.

And I liked it.

    Totally making this today! Girl Scouts were EVERYWHERE yesterday, and I do not even like their cookies, but after seeing the 100th girl scout I was craving a cookie! I caved and bought a box, which husband is bring to work. These sound perfect! Thanks!

    I need this! Whenever I bake cookies, I always end up eating half of them in 24 hours or less.

    This made me smile. Your explanation of why you can’t bake more than one immediately made me think of ‘If you give a mouse a cookie.’ 🙂

    I usually only bake the things I can’t resist when we are having friends over or are taking them somewhere, as then I know they won’t all be in my kitchen calling for me to eat them.

    Um…my #1 plan when I go home tonight is to make myself one cookie. I need it. Like yesterday. 🙂

    Yeah, this is what I need to do instead of eating the entire tray of baked goods by myself.

    There’s a reason I rarely bake. If I know I have a dozen cookies in my kitchen, I’m going to eat at least 6 of them. That’s just how it goes. Making just one is a genius idea.
