i like the puff

On Sunday I did this workout.

Homegirl is not lying…it was KILLER!

I liked it.

I also decided that I should make something good for dinner. You know because I earned it.

Enter puff pastry.

Oh yeah. I totally earned it.

Puff Pastry Salmon

1 5oz. boneless skinless salmon fillet

1/8 tsp. garlic powder

1/4 tsp. onion powder

1/3 package puff pastry, thawed

2 tbsp pesto

1/2 (6 oz) package fresh spinach

Preheat oven to 375* F. Season salmon fillet with salt, garlic powder and onion powder.

Thaw puff pasty according to package directions. Lay flat and place half the spinach in the center. Place salmon on top of spinach. Spread pesto over salmon and top with remaining spinach.

Moisten the edges of puff pastry with water (or you can use an egg wash); fold to center and seal the seams.

(Yes I realize my baking pan is disgusting but it add character, no?)

Bake for 20-25 minutes until pastry is puffed and golden.

Serves: 2 (You can make 2 individual packets or one big packet and then cut it in half)

Totally loved every last bite.

    Been trying to figure out an awesome dish for this HUGE piece of salmon I have…And I found it. Now this may sound dumb, but where do I find puff pastry in the grocery store?!

      It is usually in the freezer section by the dessert type foods…pie crusts, pies, etc.

    My baking pans all look like that too. This looks good. I have never cooked with puff pastry before.

      I know! My mom’s pans are perfect even though she uses her all the time. I never understand how hers stay so perfect and mine look like hell. Questions in life that will be never be answered! 🙂
