perfect
Thanks everyone for the sweet words yesterday. I feel like it is this never ending battle. One day I am fine and then next day I’m a mess again. It is like one step forward and two steps back. But I suppose that is normal. This is new to me but I think that however I feel like reacting is what I should do. Right?
I do know that what me cheers me up is breakfast.
I love (like really love) breakfast foods.
If it were up to me there would be breakfast served in the Bruneman household for all 3 meals. Unfortunately Keith is not down.
Humpf.
But this morning I know myself well enough to know that a good breakfast would at least start my day right and allow the corners of my mouth to turn upward ever so slightly.
Never a bad thing.
I made pancakes. Not just any pancakes but the best pancakes I have found in the blog world to date!

I made some “egg cupcakes” this week. I basically sauteed veggies, mixed them with beaten eggs, topped with cheese, and baked them! My fiance and I packed them up to take for breakfast all week.
Those DO look perfect. My breakfast lately has been…wait for it…frozen waffles.
I know. Thrilling. 🙂
I love frozen waffles better than anything I make using my waffle iron. I like my waffles to be really crispy and whenever I make them in a waffle iron they always stay a bit soggy. My favorite brand is Vans.
Here’s to hoping each day gets brighter. Pancakes certainly help!
I’m actually not a big breakfast person. I used to just eat cereal every morning, but in an effort to eat more protein and less carbs I’ve switched to my boring egg bakes.
Yay for smiles! I’ve still never made pancakes. I’m always scared they’ll stick to the pan and burn. Pitiful, right?
Wait…you’ve never made pancakes…ever?? That is too funny. Use some nonstick spray…they won’t stick.
My favorite breakfast at work is oatmeal because it’s always freezing in our office and I look forward to my hot breakfast! I love my eggs and pancakes on the weekends, though!
I don’t really like breakfast food for breakfast, it’s too heavy for me. But lunch and dinner on the other hand, bring it on.
And lately I’ve been putting a fried egg on top of everything. It’s weird, but delicious.
I love breakfast too. Im all about the eggs, probably because I was allergic to them as a kid so I never got to eat them growing up. I still have a mild allergy to them I think, so I cant overdo it, but on weekends my egg breakfasts are my favorite thing.
I could eat scrambled eggs with salsa, nutritional yeast, and ground turkey crumbles every day, breakfast, lunch, AND dinner. If I go out to dinner to a place that serves breakfast all day, that is what I get. Not even a glance at the dinner menu.
Pancakes used to be my favorite food of all time, until I ate them every single day for two years. No joke, every day. I haven’t really been able to look at them since.
That is how I feel about acorn squash. I went through a phase where I ate it all the time now I can’t even stand to look at it.
I keep alternating between egg scrambles and oatmeal. I was definitely in a rut, so throwing eggs in there every few days totally helps!
And I’d eat breakfast for all three meals, too… 🙂
yummmmm…. I’m totally with you on breakfast for every meal…even if it was just cereal. Cereal is so amazing. Best thing to ever be invented… haha anyway, I’m going to link my fav easy breakfast even though you don’t really like pumpkin
