birthday celebrations get better with age

This weekend my cousin, Katie, celebrated her 28th birthday. Here we are when we were kids at summer camp. We’re the two on the end…she’s the red head…obviously. 🙂

You know you are getting more mature when your birthday party is a potluck girl’s brunch verses an all night drunk fest downtown. I must say a potluck brunch is just my style. There was so much delicious food plus peach belinis to keep everyone happy. Good food + good drinks + even better company = a successful birthday celebration!

Since I have five little chickens running around my yard and getting close to 30 eggs a week I knew I wanted to make an egg dish. But that was about as far as I got. Then Lori posted her Paleo Breakfast Bake and I knew I had my dish for the party!

(Fresh Chicken) Egg Breakfast Bake adapted from What Runs Lori

  • 12 eggs
  • 6 chicken and maple breakfast sausages, cooked and sliced (I used Applegate Farms)
  • 1 cup mushrooms, sliced
  • 6 tbsp onions, roughly chopped
  • 1/2 red bell pepper, chopped
  • 1 tsp each, salt and pepper
  • 1 tsp paprika
  • 1 tsp dried thyme

Heat oven to 350 degrees.

In a large bowl, combine all the ingredients, folding gently to incorporate all. Pour into a greased 9×13 glass Pyrex baking dish.

Bake for 45 minutes. Easy. As. That.

    That picture of you is so cute! And I totally agree: I’d rather have a nice meal + nice drinks + people I like.

    That egg bake sounds delicious. A birthday brunch sounds way more appealing to me than partying all night long. I need my sleep thank you very much. 🙂

    HAHA! I love it!!! Yes, you know you’re getting old when your friends bring their babies to your party!! And I have always preferred sitting and eating to going downtown and partying… but it is only now becoming socially acceptable for me to say so! Hah!!
    I’m getting older and still trying to keep up with you, my beautiful cousin!! 🙂

    Brunch is way more my style too. I love looking back at old pics of me and my friends. High waisted shorts were my #1 staple!

    Oh my God – that Bake is exactly something simple that I am going to make! I’ve been looking for something quick, healthy and easy to pop in the oven but that includes protein.

    (BTW, just seen your wedding photo in a post below – you look stunning and love that gown!)
