1. Hi, my name is Kelly and I am addicted to these. Send help…or don’t.

2. I am reading Rob Lowe’s autobiography, Stories I Only Tell My Friends, and it so good. I can’t put it down. I fell in love with Rob Lowe on Brothers & Sisters; he will always be Robert McCallister to me.

3. I don’t care where my boy goes I will always be a Peyton Manning lover. Peyton ‘fo life!

4. Anna posted these and I wanted like ten; then her husband followed it up the next day with this. Anna and Ryan, can I move in? I’ll do the dishes.

5. I am thinking of making these this weekend does anyone want to come over for breakfast?

6. Truth: I ate dinner at 5:00p.m most nights this week. What about it?

7. I ran 3 miles yesterday morning and my left knee flared up a little. Cool it knee, cool it!

8. I love love love that the high this entire week has been in the 70’s. Winter what? I will be complaining this summer again when it is 112. Nobody worry.

9. Keith and I rented this movie for the weekend. Anyone seen it? Thoughts?

10. Sunday night Keith and I are eating at one of favorite restaurants, Houston’s. I am jump up and down excited.

6-10 servings of what??

It seems like within the last week I have had several people ask me how I get the recommended amount of vegetables (6-10 servings) in my daily diet. For me, this is really really simple. I actually struggle much more with fruit than I do with veggies.

But I do two things to ensure veggie success!

1. I add 2 cups of spinach to every smoothie I make. You can’t taste it and BAM 2 servings right there. Score.

2. I make a ginormous salad every single day for either lunch or dinner. I change up what goes in the salad and what the main protein is but I eat one every day. 6-10 servings…I got this.

Yesterday I had my salad for dinner. Here are the deets:

  • 3 cups mixed greens
  • 5 baby carrots (chopped)
  • 1/2 squash (sliced and then halved)
  • 1/4 cup mushrooms and 1/4 cup onions (sautéed in olive oil for flavah!)
  • 1 Tbsp. black olives
  • handful of roasted brussels sprouts
  • 2-3 Tbsp. hummus (dalloped all around)
  • 1 Tbsp. sliced almonds
  • 1 Tbsp. craisins
  • 4 oz. grilled chicken breast
  • 2 Tbsp. of this dressing

It tastes awesome and believe me it is filling! But the point is you can put anything in there…mix and match to your heart’s desire. Salads don’t have to be boring nor do they have to be filled with unhealthy ingredients to taste good.

overnight oats + a book review

I have a confession and it is all Julie’s fault.

She posted a few weeks ago her method to successful overnight oats. Prior to this, I hadn’t ever had them. I had mixed raw oats with yogurt but hadn’t fully committed to the full overnight method.

So I bit the bullet and tried it.

The result? A thick creamy concoction that I am loving.

Confession: I have eaten overnight oats every single morning for 2 straight weeks. That’s 14 bowls off overnight oats!

I have found that I like mine to be really thick and I don’t add any extra liquid in the morning. I just stir it up and dig right in. My favorite combination is using the blueberry Fage yogurt and then sprinkling cinnamon and some walnut pieces in. It’s like a blueberry muffin in a bowl. Perfect!

In today’s mix: 1/2 cup plain Fage, 1 packet of organic blueberry cinnamon with flax instant oatmeal, 1/8 cup almond milk, 2 T. chia seeds and cinnamon.

Looks like butt but tastes delicious!

Plus the bowls pack some staying power. This will usually hold me over for  good 4 hours and that is impressive when talking about my appetite.

Anyone else as obsessed with these things as I am? And if so please share your recipe for an overnight success? I am on a kick and willing to try ’em all! 🙂

I finished the book last night called Sacred Acre: The Ed Thomas Story and it was a good read with a good message. Very inspirational and uplifting to see what other challenges people face in their lives and how they rise above adversity.

Do you remember your dreams?

I do! I have very vivid dreams almost every single night and can usually remember at least 2 of them. It’s crazy. I even go back to dreams. Like if I wake up in the middle of the night and go to the bathroom I will 9 times out of 10 fall right back into the same dream.

I don’t really mind it, per say, but sometimes it doesn’t leave me feeling rested. Sometimes I just want one of those deep, can’t remember a thing type of sleeps.

I feel like I should probably buy a dream book to see what they are telling me. I do truly believe that dreams are just a way of your subconscious working through whatever is going on in your head….good and bad.

Last night I dreamed I was being chased. So I looked it up.

To dream of being chased means that your daily concerns are inescapable. In dreams we confront our wishes and fears. Hopes and horrors. Unresolved issues that cause stress to our conscious mind find symbolic expression in our subconscious mind. The act of being pursued is the culmination of our unending responsibilities dogging us even as we sleep.

Definitely something for me to think about. I don’t think it is off base, actually. Maybe a dream book would be beneficial.
