grumpy grumpy grumpy
Sometimes you are just tired and cranky. And okay we might as well throw grumpy into the mix.
This is totally me: Mrs. Grumpy Pants.
Annnnnd, it’s Friday. Nobody wants to be grumpy on Friday and nobody wants a grumpy wife on Friday.
So.
I need a happy fix.
I need plans. I need a date. I need something to look forward to tonight.
Keith? Are you reading? Keith?
I am thinking dinner and a movie.
OH! Or veggie sushi and a rental. Gosh, I’m easy to please.
I am feeling better already. Maybe only 70% grumpy.

movie review: act of valor
Last weekend Keith and I went to see Act of Valor.

Plot: Inspired by true events, Act of Valor, stars a group of active-duty Navy SEALs in a powerful story of contemporary global anti-terrorism. When the rescue of a kidnapped CIA operative leads to the discovery of a deadly terrorist plot against the U.S., a team of SEALs is dispatched on a worldwide manhunt.
Review: This movie is AMAZING. It is gut-wrenching, sad, makes you feel proud to be an American while simultaneously making you feel like you aren’t grateful enough to be an American. As soon as the movie ended my sold out movie theater stood up and clapped. It was emotional and it just made me want to hug Keith for a long time and not let go. Bottom line: go see this movie.
healthy chicken enchiladas
I wanted enchiladas yesterday in a something bad kinda way. What I didn’t want was the grease that accompanies enchiladas. I wanted healthy enchiladas that didn’t taste healthy.
Keith was skeptical.
I was determined.
Healthy Chicken Enchiladas
Makes 6 enchiladas
2 cooked chicken breasts, chopped or shredded
1/2 cup Fage 0% Greek yogurt
1/4 – 1/3 cup red salsa
1 1/2 cup 2 % cheddar cheese
3/4 can green enchilada sauce
6 corn tortillas
Preheat oven to 350 degrees. Pour just enough green enchilada sauce on the bottom of a 8×8 glass baking dish to coat.
Shred or cube chicken. In a medium bowl mix chicken, Greek yogurt, red salsa and 1/2 cup cheese. Place a few spoonfuls into the center of a corn tortilla. Roll it up and place it seam side down onto pan. Repeat 6 times.
Pour the rest of the green sauce over the tops of enchiladas and sprinkle with remaining cheese.
Bake at 350 degrees for 30-35 minutes.
Optional add-ins: black beans, onions, cilantro (all the things I didn’t have but think it would only make it BETTER! Guess I will have to make them again.

february bookclub
This month our bookclub book was The Winters in Bloom by Lisa Tucker.

Synopsis: Kyra and David Winter are both hiding something. We don’t know what, and neither of them know their spouse’s secret either. However, it’s something so big, so heart-wrenching, that before they got married, they decided not to have children. However, they later decided to have a child. Their six-year-old son Michael disappears from the backyard one afternoon. They’ve tried to protect him from everything, because they know that they don’t deserve a child and so they aren’t at all surprised that they’ve lost him.
My review: I hated this book. Hated it! I didn’t like the actual story line much and I hated how the author kept switching between who was narrating the story. It happened so often that at times I would lose track. The writing was sloppy and disjointed. Too much of it was this-happened-then-this-happened-then-this-happened…without much action to go along with it. It was just a mess. I makes me sad because this was an author I have never read before but I am doubtful that I will read anything by her again.
