quinoa salad

With the holidays approaching and the weather getting cooler I find myself in the kitchen a lot more. I find myself actually wanting to cook versus having to cook.

Anyone else with me here?

Last weekend I made a dish that knocked mine and Keith’s socks off and I had to share.

This would make a great side dish (just omit the chicken) or a great main dish. Pick your pleasure.

Quinoa Salad

1 cup quinoa

1/4 tsp. salt

2 1/2 cups water

6 green onions, chopped

1 small bag craisins (probably 1 1/2 cups)

1 tablespoon grapeseed oil

1 tablespoon apple cider vinegar

2 tablespoons lemon juice

2 tablespoons sesame oil

1/3 cup cilantro, chopped

3/4 cup walnuts, chopped

8 oz. cooked chicken , cubed (optional)

Bring the quinoa, water and salt to a boil in a saucepan. Reduce heat to medium-low, cover and simmer until quinoa is tender, 20-25 minutes. Transfer quinoa into a large serving bowl and let cool for 20 minutes.

Once cool stir in green onions, craisins, grapeseed oil, apple cider vinegar, lemon juice, sesame oil, walnuts, cilantro and chicken (if using). Be sure to mix everything together really well.

Put in a pretty bowl and eat.

Serves 6

    I definitely cook way more in the winter. Mostly bc I have to take advantage of Brandon’s grillin’ skills in the warmer months and give momma a few nights off 🙂

    I always cook more in the winter. Or at least my crockpot does. That counts, right? 🙂

    Nate and I love eating this quinoa salad that I add broccoli, spinach, and chicken in and drench in TJ’s Island Soyaki sauce…It’s so delicious! This is a nice twist on that! I’ll definitely be making this this week! Thanks 🙂

    I don’t know if I cook more in the winter, but I probably put in more effort. Making soup is just more time consuming than making a salad.

      That’s a good point…winter food just takes longer to make it seems!!

    I definitely am cooking more. Of course, this could be because I am currently unemployed!
