Pumpkin. Oh pumpkin.

This time of year pumpkin = blogger food-gasisms.

I don’t do pumpkin.

Sorry I’m not sorry.

But…wait..don’t go! I can give you a delicious non-pumpkin muffin that is perfect for this of year.

Ah, well. What’d you gonna do?

Carrot Raisin Muffins

2 cups flour
2 teaspoons baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
1/2 cup vanilla yogurt
1/4 cup unsweetened apple sauce
1/3 cup honey
1 teaspoon vanilla extract
2 tablespoons orange juice
1 cup carrot, peeled and shredded

1/2 cup raisins Preheat an oven to 350 degrees F. Grease 14 muffin cups, or line with paper muffin liners.

Combine flour, baking soda, cinnamon, and salt in a bowl.

Whisk together yogurt, unsweetened applesauce, honey, vanilla extract and orange juice in a separate bowl. Gently fold in carrots into the yogurt mixture. Stir yogurt mixture into the flour mixture until just combined. Gently fold in raisins into batter.

Scoop batter into prepared muffin cups until nearly full. Bake in oven until toothpick inserted into the center comes out clean, 11 to 13 minutes. Cool in the pans for 10 minutes before removing to cool completely on wire rack.

Serves 12 jumbo muffins

    i looooove pumpkin and it will probably take a lot for me to get sick of it. BUT I also love carrot cake! and this sounds like a delicious healthy substitute. Have you ever added pineapple in it like carrot cake has? yummm, i think i know what i’m baking this weekend.

    I like pumpkin but mostly in pie form.

      I am an apple pie and pecan pie girl. So good but far more fattening than the pumpkin pie counterpart. Sigh.

    I love the carrot/raisin combo. And there are a few places I like my pumpkin- coffee, ice cream and a few beers. Not necessarily in that order.

    I like pumpkin a lot but I don’t eat it everyday and I like to save it for special times like in pie on Thanksgiving or in a batch of cookies that I make for a special occasion.

      I am most definitely an apple pie and pecan pie over the holidays. Pumpkin…now that is Keith’s favorite. Which I think might be a ploy for him not to share because every year I make him a pumpkin pie and since he knows I won’t touch it he gets the whole thing. Haha…smart man.

    I use pumpkin in cookies and mini cheesecakes and that’s about it.

    These sound delicious, although admittedly, I am so depressed you don’t like pumpkin. I know it’s annoying that everyone is constantly posting pumpkin stuff, but it’s one of my favorite flavors ever. Right behind fries and ketchup and chocolate. You know…standard đŸ˜‰

    I’m not super fond of pumpkin either. I like it sometimes, but only sometimes. These muffins sound delicious!

    Hey- love your blog! I personally love pumpkin, but this only began a few years ago, so I understand people not liking it đŸ™‚
